Salsa Grilled Cheese

Who doesn’t love grilled cheese? It’s the perfect grab-and-go
lunch — except this recipe has a special salsa kick. Enjoy!

Makes: 1 serving
Prep time: 10 minutes

Ingredients
1 tablespoon butter
2 slices bread
1 slice cheddar cheese
1 tablespoon salsa

Instructions
Use ½ tablespoon butter to spread on one side of each bread slice. Place both slices, buttered side down, on a plate. Put the cheese on top of one slice of bread. Top the cheese with salsa. Close the sandwich with the other slice of bread, the buttered side facing up. Place the remaining ½ tablespoon butter in a frying pan (or spray the pan with nonstick spray). Heat pan over medium heat. Place the sandwich in the pan and flip after 2 minutes. Cook the other side for another 2 minutes, until the cheese is gooey and the bread is golden brown …the way every perfect grilled cheese sandwich should be.

Avocado Lettuce Wraps

Talk about a quick, easy, cheap, and enormously healthy lunch option. When you’re looking for something light yet satisfying, go for the wrap! Enjoy.

Marinate time: 15 minutes

Ingredients
2 ripe avocados
2 tomatoes
3 tablespoons chopped fresh cilantro
3 teaspoons lime juice
½ teaspoon salt
½ teaspoon pepper
5 large leaves iceberg lettuce

Instructions
Peel and core the avocados, then cut into one-inch wedges. Dice the tomatoes. Mix everything except the lettuce in a bowl. Cover with plastic wrap and let marinate at room temperature for 15 minutes. Place two to three tablespoons of the mixture in the center of each lettuce leaf. Roll up each lettuce leaf like a taco.
