Wild Rice Chicken Casserole

(Note: When you look at the cost estimate for this meal, remember that this recipe serves four. So you’ll be getting four whole meals out of this one batch — more, if you make it stretch. That comes to about $5 per meal, then, which is a fantastic price for a healthy, homemade dinner!)

1 6 ¼ ounce package quick-cooking, long grain and wild rice
1 cup cooked, chopped chicken
1 cup finely chopped celery
1 ¼ cups finely chopped onion
1 cup light mayonnaise
1 10 ¾-ounce can condensed cream of mushroom soup

Preheat oven to 350 degrees. Cook rice according to package directions. Combine rice with chopped chicken, celery and onion, and place mixture in a 2 ½ quart baking dish. Stir in mayonnaise and condensed cream of mushroom soup together, and spread over top of chicken mixture. Bake covered in a preheated 350° oven for one hour.
