Quick Breakfast Burritos

burritosBurritos are an easy and delicious way to have a filling breakfast meal right in your kitchen or dorm room. They are great for small spaces because you can pack a ton of flavors into a little bundle. Enjoy!

Ingredients
2 corn tortillas
1 tablespoon salsa
2 tablespoons shredded cheddar cheese
¼ small red onion, diced
½ tomato, diced
1 small avocado, cubed
2 eggs

Instructions
Dice onion and tomato and peel/cube avocado. Top tortillas with salsa and cheese. Heat in the microwave until the cheese is melted, about 30 seconds (or if you don’t have a microwave, heat tortilla on a warm skillet and then sprinkle cheese on top to melt). Meanwhile coat a small nonstick skillet with cooking spray. Heat over medium heat, add eggs and cook, stirring, until the eggs are cooked through, about 90 seconds. Divide the scrambled egg between the tacos. Top with the onions, tomato and avocado. Fold tortillas.
