Pumpkin Apple Gingerbread

This is our family’s favorite quick/sweet bread recipe! So healthy, so yummy. Enjoy.

Makes: Two medium-size loaves
Prep time: 15 min
Cook time: 45-60 min
Oven temp: 325°F

Ingredients
3 1/2 cups flour
1 1/2 cups honey
1 tablespoons baking powder
1/2 teaspoon baking soda
2 1/2 teaspoon ground ginger
1/2 teaspoon pumpkin pie spice
1/2 teaspoon sea salt
1 cup olive oil
2 eggs
1 (16-oz) can pumpkin
1/2 cup maple syrup
1 large Granny Smith apple, shredded

Instructions
Preheat oven to 325°. Combine dry ingredients together. Whip eggs until foamy. Add honey and oil and continue to beat. Add pumpkin, syrup, and apple. Beat well. Add flour mixture and mix until blended. Grease 2 bread pans and spoon batter into each. Bake for 45 minutes to 60 minutes or until toothpick inserted in center comes out clean. Remove to cooling rack immediately.
