Avocado Lettuce Wraps

Talk about a quick, easy, cheap, and enormously healthy lunch option. When you’re looking for something light yet satisfying, go for the wrap! Enjoy.

Prep time: 10 (at most) minutes
Marinate time: 15 minutes

Ingredients
2 ripe avocados
2 tomatoes
3 tablespoons chopped fresh cilantro
3 teaspoons lime juice
½ teaspoon salt
½ teaspoon pepper
5 large leaves iceberg lettuce

Instructions
Peel and core the avocados, then cut into one-inch wedges. Dice the tomatoes. Mix everything except the lettuce in a bowl. Cover with plastic wrap and let marinate at room temperature for 15 minutes. Place two to three tablespoons of the mixture in the center of each lettuce leaf. Roll up each lettuce leaf like a taco.
